This Persian inspired smoothie is designed to bring something different to your palette, with mineral and protein rich tahini, coconut milk and lots of berries, packed with antioxidants and vitamin C for a proper start to your Saturday morning.

Goji berries are high in fibre, iron, zinc, vitamin A and vitamin C and can now be purchased in most supermarkets, or failing that, your local health store. They also contain all eight essential amino acids and are high in protein.

Ingredients

1 medium banana
150ml coconut/ rice milk
1 tbsp. tahini
70g of pitted cherries
50g blueberries
5g goji berries
A pinch of chia seeds

Directions

  1. Peel and slice the banana and pit the cherries.
  2. Put the coconut milk, banana, the pitted cherries, blueberries and goji berries in a blender with a tbsp. of tahini and mix.
  3. Serve in a glass and top it with chia seeds.
  4. For a thicker shake, add the chia seeds into the smoothie for blending and leave for 30 mins before consuming.
