Butternut Squash is low in fat and delivers a great portion of dietary fibre into your daily diet. It also contains a significant dose of potassium which is great for bones and good old Vit B6 which is great for your immune system.

Spinach is full of iron and and packed with lots of lovely vitamins too.

Tip: You can add grilled carrots.

Ingredients

200g of butternut squash
A handful of spinach
1 pack of light mozzarella cheese
1 tsp. Olive oil
Dried dill

 

Directions

  1. Cut the butternut squash into slices and sprinkle with dried dill and some salt (if required)
  2. Put on a tray and grill/bake for 15-20 min. 
  3. Slice mozzarella and mix with spinach. 
  4. When butternut squash is ready, let it to cool down for 5 min. 
  5. Then add butternut squash into your salad and sprinkle with some olive oil.
