Ingredients

200g sliced courgettes
1 crushed garlic clove
1 medium red onion
3/4 tbsp. olive oil
1 salmon fillet
1/4 lemon
1/4 chopped red chilli

Directions

  1. Roast the courgettes, garlic, and medium red onion in ¾ tbsp. of olive oil for about 20-25 minutes at 190°C.
  2. Place a salmon fillet on a baking sheet, drizzle lemon juice over it and finish off with a sprinkle of a chopped chilli.
  3. Bake for 15 minutes, 10 minutes after the vegetables have gone in, or until cooked through.
