So we all know that cheese isn't the healthiest thing in the world, but our view is everything in moderation. And if you are going to have cheese, you can do yourself a huge favour by swapping our cows cheese for goat.

Goats cheese contains less lactose than a cows, plus it actually has smaller fat globules that are actually easier to digest - bonus! That said it is still a little bit naughtly, so dependant on how strict you are being with yourself, try not to overdo it!

This delicious salad combines goat's cheese with the fantastic beetroot - a great source of fibre and folic acid, which is also rich in calcium, iron and vitamins A and C, plus lots of lovely salad leaves.

Tip: Be careful with the cheese! It might be easily overdone.

Ingredients

A handful of lettuce
A handful of spinach
A handful of chard
1 beetroot
100g goat's cheese
1 apple
Handful of walnuts
1 tbsp. olive oil

Directions 

  1. Put the mixture of leaves in a bowl. 
  2. Chop the beetroot and apple into thin strips and add to the bowl.
  3. Add walnuts. 
  4. Sprinkle your salad with olive oil and season. 
  5. Turn the grill to a medium head and and grill the cheese for 2-3 mins
  6. Place the the cheese on the top of the salad. Enjoy!
